This week for Tasty Tuesday will did a fun homemade take on Taco night! Little man isn’t a fan of salsa or that flavouring that comes in those store bought Taco kits so I wanted to make something from scratch that he would like and was significantly healthier! Just like last week I will share vegetarian suggestions and other options at the end!
Ingredients you will need:
Flat Tortilla Bread or other thin bread
Ground Beef or other meat
Clubhouse Vegetable seasoning
Various veggies! I used fresh lettuce, chives, cucumber, tomatoes
Salsa or pasta sauce
First up, preheat your oven to 350 degrees F. Take your tortilla bread and cut into circles, you want them to be at least half an inch wider than the top circle of your muffin tin. Mine didn’t come out perfect circles but don’t worry it still works!
Once cut press them into the muffin tin and place in the oven. Heat for about 15 minutes or until shells feel crunchy.
While that is getting crunchy this would be the time to brown your ground meat of choice! I used ground beef but any meat will work! I wanted a little bit of flavour on the beef so I used our favourite seasoning, Clubhouse Vegetable. It tastes amazing on everything! (Not sponsored at ALL, I just love that stuff!)
Once your beef is browned and your shells are crunchy you are now ready to fill! I placed a small amount of beef in each one then on 3 placed: Pasta Sauce and Parmesan Cheese (for little man!) another 3 got: Salsa and Marble Cheese and the last two I just left the beef in them so my husband could add what he wanted! Heat until cheese has melted.
While the Tiny Taco’s are in the oven this is the perfect chance to chop up your veggies and prepare your toppings! The lettuce and chives are fresh from our garden, don’t they look amazing!
Once the cheese is all melted you can added you fresh toppings! For mine I added the cucumber, tomato, sour cream and lettuce! I then added some fresh strawberries, blueberries and raspberries as a side.
On little mans he added lettuce, chives, sour cream and shredded cheese. I then made him a little Cesar salad with the fresh lettuce to which he added even more Parmesan cheese!
Meat: feel free to use your favourite meat alternative. Beans would make a great option here!
Cheese & Sour cream: feel free to omit for allergy reasons!
Another option: Once the shells are nice and crunchy fill with your favourite fruits and top with whipped cream for a delicious dessert!
This Tuesday meal was of course inspired by the Lego Movie! Little Man wanted to have “Taco Tuesday just like they do so I had to come up with something a little more creative!
